After slicing melon into rings, toss jicma, mango and melon on a platter followed by lime juice. Next, season the dish generously with salt then add Tajin and lime wedges for the final touch. Furthermore, it is very hydrating because of the watermelon, which is good as the temperatures are high in summer and people do suffer with dehydration.

To make this hydrating salad, you need fresh lemon juice, extra virgin olive oil, honey, kosher salt, watermelon, red endives, fresh mission figs, castelvetrano olives and flaky seas salt. Prepare the recipe by whisking lemon juice, oil and honey in a bowl, and then season it with kosher salt and pepper. Next, arrange watermelon, endive, figs and olives on a platter and drizzle the dressing over the platter. Finish by sparkling sea salt.

The Spicy Grilled Chicken with Crunchy Fennel Salad

If you are in a mood to eat something spicy, you should try The Spicy Grilled Chicken with Crunchy Fennel Salad. The dish is a mixture of hot and cool separates placed together. The chicken has got some heat whereas the fennel salad is cool and crisp. The ingredients required for the chicken includes boneless chicken, kosher salt, garlic cloves, oil-packed anchovy fillets, red chile seeds, tomato paste, oregano, olive oil and lemons. Whereas, you need fennel bulbs, white onions, rice vinegar, olive oil, kosher salt and white or black sesame seeds to make fennel salad. However, if you don’t enjoy eating fennel replace it with any shaved crunchy veg like carrots.

Season the chicken with salt and set it aside. Next, smash garlic with the knife on the cutting board and add anchovies and chile to it. Smash until a paste forms. Transfer the paste into a bowl and stir in tomato paste, oregano, and oil. Finally, add chicken to the blend and set it aside. Next, prepare a grill for medium heat, clean and oil grate. Grill chicken until it turns charred and cooked through, followed by lemons. Transfer both to the platter. To make fennel salad, toss fennel, onion and vinegar in a bowl. Drizzle oil and pinch of salt in the bowl and toss the mixture. After tossing, place the fennel salad next to your spicy chicken and sprinkle sesame seeds over the platter.
